Corn bread mix

I was cooking up a crock pot of chili today. I was on the phone with my dad and he asked if I had made any corn bread to go with the chili. No, I had not. I was going to serve bread. Then I remembered I had a box of corn bread mix in the pantry.

I love Trader Joe's corn bread mix. So easy to make. Plus it has chunks of corn. Oh yummy!
Mix it up with and eggs, oil and milk, bake about 40 minutes. Comes out nice and fluffy and goes great with chili or soup. Of course slabbed with a lot of butter, real butter.

I did check out the website. It does not have specific product information, but does have recipes. The kids and I love stopping by for a sample of what's cooking that day.

Welcome to the addicting world of blogging. God Help us all. I HAD to reply to this...the only thing better than TJs cornbread mix is splitting the box with half a box of Jiffy yellow cake mix. mmmmm.
